A successful dinner needs a clever menu. Lots of make-ahead elements and almost nothing to cook at the last minute. These are all tried and trusted family recipes, which my family has been making for years and which never fail me.
Make your Greek Easter feast effortless with smart prep-ahead tips that minimize stress and maximize flavor. By preparing key dishes in advance, you’ll have more time to enjoy the celebration with loved ones—without last-minute kitchen chaos. From dips that taste better after resting to slow-cooked mains that only get more delicious, a little planning goes a long way!

Baked Spicy Feta - Bougiourdi

A delicious, oven-baked feta dish with tomatoes, spicy peppers, oregano, and olive oil. The perfect combination of heat and creamy feta goodness kickstarts the meal.
Prep Ahead: Chop the tomatoes and spicy peppers a day in advance and store them in an airtight food container in the fridge. You can also assemble the entire dish in its baking dish, cover it with plastic wrap, and refrigerate it overnight. The next day, bake it fresh before serving.
Spicy Feta Dip - Tirokafteri

A bold, tangy dip made from feta cheese, roasted red peppers, and a hint of chili, blended into a creamy delight that pairs perfectly with warm pita bread.
Prep Ahead: Blend the dip a day before and store it in an airtight food container in the fridge. The flavors deepen as it sits, making it even more delicious. Stir it before serving and drizzle it with olive oil for a fresh touch.
Crustless Zucchini Pie

Light yet flavorful, this pie features fresh zucchini, feta cheese, and herbs coming together in a wonderfully tender and savory delight without the need for a crust.
Prep Ahead: You can also assemble the pie in the baking dish, cover it with plastic wrap, and refrigerate it overnight. The next day, bake it fresh before serving. However, I recommend baking it the previous day and keeping it in the fridge. The next day, reheat it, and it is even more delicious.
Tzatziki

Prep Ahead: It is essential to prepare the tzatziki a day ahead and store it in the fridge in an airtight food container. This allows the flavors to meld beautifully. Just stir before serving and add a drizzle of olive oil for freshness.

Lettuce Salad - Maroulosalata

A light and crisp salad with fresh lettuce, spring onions, dill, and a lemon-olive oil dressing offers a fresh contrast to the rich main dishes.
Prep Ahead: Wash and dry the lettuce thoroughly a day in advance, then store it in an airtight container with a paper towel to keep it crisp. Chop the spring onions and dill ahead of time and refrigerate them separately. Prepare the dressing and keep it in a jar, shaking well before serving. Assemble everything just before serving to keep it fresh.
Greek Salad - Horiatiki

A true Greek classic! Juicy tomatoes, crisp cucumbers, onions, Kalamata olives, and feta cheese, drizzled with olive oil and sprinkled with oregano. Simple, fresh, and packed with flavor.
Prep Ahead: Chop the cucumbers, tomatoes, peppers, and onions a couple of hours in advance. Place the veggies in the serving bowl without adding the olives, salt, olive oil, oregano, and feta cheese. Cover the bowl with plastic wrap and store it in the fridge.
Assemble the salad just before serving: season the veggies with salt, place a block of feta on top, sprinkle with the olives, and drizzle with a generous amount of olive oil (preferably Greek) and, finally, the oregano (Greek, of course).

Kleftiko - Greek Lamb in Parchment Paper

A traditional dish inspired by Greek rebels who cooked their food underground to avoid detection. Succulent lamb is slow-cooked in parchment paper with garlic, lemon, oregano, and vegetables, resulting in a tender, aromatic, and unforgettable dish.
Prep Ahead: Marinate the lamb with garlic, lemon, oregano, and olive oil a day before cooking—this enhances the flavors. You can also chop the vegetables in advance and store them in the fridge. Αssemble the lamb in parchment paper in the morning, and bake it fresh before serving.

Ekmek Kataifi

A heavenly dessert made with layers of crispy kataifi pastry, soaked in syrup, topped with creamy custard, and finished with whipped cream and crushed nuts. A perfect sweet ending to the Easter feast.
Prep Ahead: Make the syrup 1-2 days ahead, let it cool completely, and store it in the fridge. Remember to take it out at least an hour before pouring it over the hot kataifi base. You can also prepare the kataifi base and the custard up to three days in advance. Assemble them in the baking dish, let them cool completely, cover the baking dish with plastic wrap, and refrigerate. For the whipped cream (with or without mascarpone), it's best to whip the cream fresh the same day, a few hours before serving, to ensure the best texture.
